In A Hurry?
First of all, don't be! Life is short which is why you should really enjoy your outdoor cooking. Here are a few suggestions for enjoying the process:
Start early, fire up your grill and get the temperature set and stable.
If you are GRILLING: Using a paper towel, apply a thin layer of cooking oil on the surface to help prevent sticking. Always place the food on a HOT grill directly over the cooking area. When the meat releases, turn and continue. If too hot, move to a cooler place and cover after you have a nice sear on the meat.
If you are BARBECUING: Place the meat over non-direct heat - not directly over the fire. Close the lid and allow it to cook undisturbed as much as possible. Baste occasionally after it has cooked half-way. Maintain constant temperature and allow the meat to cook until complete.
Plan your time accordingly. Try to know how long it takes to cook and have it ready. Think lower stress!
