How many times have you felt out of control with the heat emanating from your grill? Plenty, we would guess. The fire gets too hot and there is no safe place to prevent further charring. We suggest you subscribing to the 2 or 3 burn zones method. First, bank most of the coals on one side of your grill (or turn on one burner on high) and use that for searing. Next have another area of your grill with less charcoal (or turn on a second burner to medium) for intermediate heating. Finally have a cool zone with almost no charcoal (or one burner not turned on) for a resting area. You can then move the meat around as needed and place it in the area most conducive for your cooking prowess.
